Why in the heck do the elder Dragons in the original games have ears?
Do they suddenly just grow the ears? Now that I think about it, would this mean Spyro, Ember, Flame etc. would eventually grow ears at an older age?

I wondered about this too when I played AHT. Maybe they start growing ears around the time they start walking on two legs? Teenage dragons would be pretty funny looking, then.

Actually, the elder dragons only have ears in A Hero's Tail and Shadow Legacy. In all other games, they don't even have that.
